Perfect Fall Oatmeal Muffins

OMG these muffins were on my mind for literally weeks. As fall set in and I could feel the cool crisp air, all I wanted to do was bake! And I must say, these are absolutely delicious. 

  • 1 cup almond or cashew milk
  • 1 1/2 tbsp apple cider vinegar
  • 1 egg (optional)
  • 2 tsp pure vanilla extract
  • 1 cup applesauce 
  • 1 cup rolled oats
  • 1 1/2 cup gluten free flour
  • 1/4 cup pure maple syrup
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup chocolate chips

Preheat oven to 400 F. Add liners to 12 muffin tins, and set aside. In a mixing bowl, whisk together the wet ingredients. In a separate large bowl, stir the remaining ingredients together (except the chocolate chips). Pour dry into wet, and stir until just evenly combined. Then add the chocolate chips, stir them in gently. Portion evenly into the muffin liners and bake 18 minutes. Let them cool so you don't burn your mouth! 

Enjoy with coffee or tea for a mid-morning snack.
